Protein Cookie Puffins

I have to admit getting this recipe right was quite enjoyable.  These soft baked cookie puffs or puffins, as we call them around here, are a real tasty treat the whole family will feel good about indulging.  With peanut butter, cinnamon, and chocolate flavors, every bite is also protein packed and fiber filled for that healthy balance.


3/4 C. Kodiak Cakes Cinnamon Oat Mix (or plain mix with 1/4 C. Quick Oats and 1 tsp Cinnamon)

1/2 C. Butter

1/2 C. Chocolate Chip Morsels

4 Tbsp Peanut Butter

1 Tbsp Flax Seed

1 Tbsp Honey

1/4 tsp Baking Powder

1/4 tsp Baking Soda

1/4 C. Water

2.5 oz. Vanilla Yogurt

Servings: 16

Cook Time: 15 min.

Preheat Oven: 350°

1.  Whip butter, peanut butter, oil, and yogurt, and honey in a bowl

2.  Mix all dry ingredients in a separate bowl

3.  Combine whipped ingredients and dry ingredients adding the water to help fusion

4.  Fold chips into dough like mixture

5.  Form ping pong sized balls and space them on non stick cookie sheet

6.  Bake 15 minutes

7.  Enjoy after cooling several minutes
